    Paleo-ish cookies… there might still be some samples at the gym. While these are not healthy (1/2 cup of honey), they are pretty good, and probably better than sugar cookies decorated like christmas trees (though Laura might disagree) if you need to make cookies for some reason. Hoping to try some more recipes in the coming weeks:

    As I prepared them:
    Paleo Cacao Nib Cookies

    1 C Almond Flour
    2/3 C Shredded Coconut
    1 1/2 Tablespoons coconut oil
    1/2 Cup Almond Butter
    1 C Coco Nibs
    1/3 Coconut Flour
    1 Tablespoon vanilla
    1 Egg
    1 Tablespoon Cocoa Powder
    1/2 Cup Honey

    I mixed everything with a spoon and baked at 350 for about 15 minutes (after the 9 minutes in the original recipe, they still seemed really gooey). I would also probably skip the cocoa powder next time, but that's obviously personal preference. I would also melt the coconut oil before hand, as it was a little difficult to mix in. Good luck.
